2 C. All-purpose flour
4 tsp. Baking Powder
1 tsp. Cinnamon
1 tsp. Salt
4 Tbsp. Sugar

Wet:
2 C. Milk
2 Large Eggs, slightly beaten
4 Tbsp. Oil
2 tsp. Vanilla (pref. pure)

Directions:

Combine dry ingredients in a large bowl.

In a separate medium bowl place all wet ingredients. Combine until slightly blended.

Slowly pour the Wet ingredients into the Dry. Mix well. Careful not to over mix.

Cook on a slightly greased griddle or frying pan. We make "kid sized" pancakes at our house. Feel free to make them as large you wish. Or place in a squirt bottle to create fun shapes & letters.

This basic recipe has been adapted from my home economics class back in the early 1990's. Since it was so enjoyed by myself & my classmates, I brought it home for my Mom, Step-Dad & younger Brother to try. To my great pleasure everyone LOVED these pancakes. I often doubled or tripled this recipe! My Brother and Step-Dad ate them as fast as I could make them! Now, with my own family, I am pleased that this recipe is still well loved, as I'm sure it will be with yours!
