2 limes or 1 lemon
1/4 cup peanut butter
1/2 cup bottled honey-Dijon salad dressing
1 Deli roasted chicken or 4 cups sliced cooked chicken
1/2-1 tsp hot red chili flakes
1 red pepper
1/2 English cucumber
1/4 large red onion
12 cups mesclun greens
1/4 cup chopped fresh coriander or basil
1/4 cup chopped roasted peanuts or almond

Directions:
Directions:
Squeeze 3 Tbsp lime juice into a very large bowl. Whisk in peanut butter, salad dressing and chili flakes. Tear chicken into strips and add to dressing. Thinly slice pepper. Slice cucumber. Thinly slice onion. Add all to dressing with mesclun greens and coriander. Toss to evenly coat. Sprinkle with nuts.
