"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
6 slices of white bread, toasted (don't use fresh) 2 c. cored, chopped and peeled red apples milk as needed 2 eggs 1/2 c. raisins 1/4 c. sugar 1/2 tsp. salt 1/2 tsp. pepper 1 c.celery
Tear bread into pieces. Place in a large mixing bowl. Soak with milk by adding milk gradually and mixing lightly with fingers. (Make sure toast is soaked with milk). Add remaining ingredients and mix together with hands. Place inside chicken or turkey. If cooked by itself, spray pan and bake slow at 325º. It tastes best inside poultry.
This was always a Struttman Family tradition for our Thanksgiving dinner.
