Step 1:

1 cup chopped onion
2 large cloves garlic
12-14 fresh mushrooms
2 large stalks broccoli
2 cups fresh spinach
tsp oregano
salt and pepper



Step 2:

2 cups cottage cheese
1 cup shredded mozzarella cheese
3 Tablespoons Parmesan cheese
cup fresh chopped parsley
2 eggs
tsp each salt and pepper


Step 3:

A jar of prepared spaghetti/tomato sauce of your choice

Step 1: Chop all vegetables. Saute onion and garlic in 1 Tablespoon butter (or olive oil if preferred). Add rest of ingredients. Fry 5-6 minutes. Remove from heat. Step 2: Mix all ingredients together. Step 3: In 9x13 pan layer ingredients in the following way: 1/3 spaghetti sauce, 3 oven ready or pre-cooked lasagna noodles, 1/2 cottage cheese mixture, 1/2 vegetable mixture; 1/3 spaghetti sauce, 3 oven ready or pre-cooked lasagna noodles, 1/2 cottage cheese mixture, 1/2 vegetable mixture; 1/3 spaghetti sauce, 3 oven ready or pre-cooked lasagna noodles. Sprinkle with mozzarella and Parmesan cheese. Bake at 375 for 30 minutes. Let stand for 10 minutes before serving.
