1 lb beef stewing cubes
6 cups chopped vegetables
¼ cup pot or pearl barley
1 can beef broth
¼ tsp each of thyme, dillweed and pepper
1 bay leaf

Directions:
Directions:
Brown beef at bottom of soup pot. Add chopped vegetables which can include onions, carrots, celery and potatoes. Add rest of ingredients plus 4 cups of water and bring to a boil. Cover and reduce heat to simmer until beef and barley are tender. Remove the bay leaf. Serve sprinkled with chopped fresh parsley if desired. Can also add frozen peas and/or beans. Very easy to make and a family favorite with fresh bread.
