Cooking oil spray
85g packet mango jelly crystals
1 tablespoon gelatin
1/4 cup caster sugar
1 3/4 cup boiling water
2 medium (780g) mangoes
400ml can coconut cream
2 tablespoons lime juice
fruit salad, to serve
shredded lime rind, to decorate

Lightly spray a deep 22 CM baba pan with cooking oil.

Combine jelly crystals, gelatin, sugar and water in a large heatproof jug. Stir until crystals are dissolved. Cool at room temperature for 20 minutes.

Meanwhile, peel and cut away mango flesh until smooth. Stir 1 1/2 cups mango puree into cooled jelly mixture (reserve any remaining puree for another use). Stir coconut cream and juice. Pour mixture into prepared pan. Cover and refrigerate overnight, or until sets firm.

To serve, place a plate on top of baba pan, then invert. Fill centre of mango jelly with fruit salad. Decorate with pieces of shredded lime rind.
