6 ham steaks
6 bacon rashers
450g can sliced pineapple in syrup, drained
6 eggs
6 damper rolls, split and toasted
6 iceberg lettuce leaves, shredded

Mango relish;
2 medium mangoes, finely chopped
1/2 cup mango chutney
4 green spring onions, finely sliced

To make mango relish, combine all ingredients in a small bowl.

Cook ham, bacon and pineapple, in a single layer, on a heated, oiled barbecue hotplate (or in a frying pan), until browned and bacon is cooked through.

Meanwhile, fry eggs on a heated oiled barbecue hotplate (or in a non stick frying pan), until lightly browned underneath and tops are just set, or cooked to your liking.

To assemble burgers, spread 1 tablespoon of mango relish over bases of buns. Top with lettuce, ham steak, egg.bacon and pineapple. Top with remaining mango relish and serve with tops of buns.

for spicy mango relish, stir in 1 finely chopped small fresh red chili or 2 tablespoons sweet chili sauce.
