1 large head broccoli cut in bite size pieces (you can use 1 large bag frozen)
1/2 c. butter
1/2 c. flour
1 medium onion, chopped
2 c. milk
1 c. cheddar cheese (medium to sharp), grated
2 cans chicken broth
salt and pepper

Directions:
Directions:
Cook broccoli in small amount of water until tender. Drain and set aside. Cook onion in butter until transparent. Stir in flour and cook about 5 min. Slowly add milk and keep stirring until smooth and blended. Stir in cheese. Take about 1/3 of the broccoli and process it in food processor. Add this to milk and cheese mix. Add chicken stock and remaining portion of broccoli pieces. Add salt and pepper to taste. Simmer on low for 15 min. Place lid on pan and simmer 20 min. on low heat.

You can Rivels if you wish before simmering.
Rivels: In a small bowl using a fork, stir 1 c. flour, 1/4 tsp. salt, 1 egg, 2 T. of milk until crumbly (pieces will be about the size of peas). Stir into soup.
