2 teaspoons oil,
1 onion, finely chopped
2 cloves garlic, crushed
250g sausage mince
250g beef mince
1 cup seasoned stuffing mix
2 tablespoons finely chopped fresh parsley
1/3 cup tomato sauce
1 egg, lightly beaten
salt and pepper, to taste
2 1/1 sheets frozen puff pastry, thawed and halved
extra 1 egg, lightly beaten
fresh herbs, to garnish
extra tomato sauce, to serve

Directions:
Directions:
Heat oil in a small non stick frying pan. Add onion and garlic. Cook, stirring, until onion is soft. Transfer to a large bowl and allow to cool slightly. Add sausage and beef mince, stuffing mix, parsley, tomato sauce, egg and salt and pepper. Using hands, mix until combined.

Divide mince into 5 equal portions. Shape each portion into a 25cm long sausage. Place each sausage along one long side of a pastry sheet. Brush edges of pastry with extra egg and roll up firmly to enclose filling. Cut each roll into three even pieces. Place seam side down on an oven tray lined with baking paper. Brush extra beaten egg over pastry and prick lightly with a fork.

Cook sausage rolls in a hot oven (200c) for about 30 minutes, or until pastry is golden brown and puffed.

Garnish sausage rolls with fresh herbs. Serve with extra tomato sauce.
