6 large apples, pared and cored,
6 egg whites,
powdered sugar,
Whipped cream.

Directions:
Directions:
Stew apples with very little water until soft. Press through a sieve and set on ice to cool.
Beat egg whites to a froth, add powdered sugar and beat till soft peaks: add the apples. Beat together into a stiff foam. Heap high in a tall pretty glass and serve with whipped cream.
So good when it is hot outside!
