Pastry:

1 1/2 cups flour
1/3 cup sugar
3/4 cup butter



Filling:

3 eggs, slightly beaten
1 1/2 cup sugar
3 Tbsp flour (rounded)
juice of 1 lemon
grated rind of 1 lemon

Directions:
Directions:
Blend first 3 ingredients with pastry blender. Press into 7x11" glass pan. Bake 20 minutes at 325º. Cool a bit. Mix filling ingredients and pour over crust. Bake approximately 20 minutes at 350ºF until edges are turning brown and filling is solid. Cut into bars when cool and sprinkle with powdered sugar. These freeze really well.
