"The most remarkable thing about my mother is that for thirty years she served the family nothing but leftovers. The original meal has never been found."--Calvin Trillin

2 lbs lean ground beef
1 large onion
2 stalks celery
1 large green or red pepper
2 cloves garlic crushed
1 qt canned tomatoes
1 large (48 oz) can kidney beans
2 cups frozen corn
several Tbsp chili powder (to taste)
3/4 cup hot chunky salsa
1/2 cup brown sugar
2 Tbsp vinegar
salt and pepper

In large pot, brown ground beef with onion, celery, pepper and garlic. Add remaining ingredients and simmer for several hours. Great served with cornbread. Amounts in the recipe are approximate and can easily be adapted to taste. It used to seem like a huge batch until all the kids got married... now it's just barely enough to feed us all when we get together!
