2/3 c. uncooked wild rice, cooked per pkg.'s instructions and cooled
1/2 c. mayonnaise
3 T. milk
2 T. lemon juice
3 c. chicken, cooked and cut into 1/2" pieces
1/4 c. onion, finely chopped
1 (8 oz.) can water chestnuts, drained and sliced
Salt and pepper to taste
2 c. seedless grapes, halved
1 c. cashew nuts
6 lettuce leaves (for decoration)

Directions:
In bowl, combine first 8 ingredients; cover and refrigerate. Chill well. Before serving, stir in grapes and cashews. Arrange lettuce leaves around salad bowl and put salad on top.

I took this salad to the Bartholomews' 4th of July party for about three straight years and got compliments every time! (That doesn't happen to me all that often with my cooking).
