2 pound fillet of beef, trimmed and tied
1 tablespoon unsalted butter, room temp
1 1/2 teaspoons Kosher salt
1 1/2 teaspoons Black pepper

Directions:
Preheat oven to 500º. Be sure your oven is very clean or use the outdoor grill on indirect method.

Place beef on sheet pan and pat outside dry with paper towels. Spread the butter all over with your hands (I just use a little olive oil). Sprinkle entire roast with salt and pepper combo.

Roast for exactly 22 minutes for rare. 25 minutes for medium-rare.

Remove from oven and cover tightly with aluminum foil - rest for 15 minutes. Slice thin.

The “Barefoot touch” was to use 2 sliced baguettes smeared with 3ozs black truffle butter, layered with arugula, roast beef and shaved Parmesan.
