30 large garlic cloves, peeled
1/4 cup olive oil
1/3 cup white cream-style horseradish
1/2 teaspoon kosher salt
1 well trimmed boneless beef rib roast (6 lbs)

Directions:
Preheat oven to 350º.

Toss garlic cloves in olive oil in small baking dish, cover. Bake until garlic begins to brown about 35 minutes.

Cool infused oil 15 minutes and place in food processor with salt and horseradish. Puree till smooth.

Sprinkle beef with salt and pepper. Spread thin layer of garlic puree on underside of beef. Using a rack inside of the baking sheet-place meat down and repeat with remaining garlic mixture on top side of beef. Cover and refrigerate at least 3 hours or overnight.

In preheated 350º oven, roast beef to desired doneness - checking with a meat thermometer.
Transfer beef to platter and let rest 30 minutes.

We also do this outside on the gas grill using the “indirect heat” method - works great!!
