1 c. diced cantaloupe
1 c. diced honeydew melon
1 c. watermelon
1/4 c. red onions (finely chopped)
1/4 c. fresh mint (chopped)
2 Tbsp. olive oil
2 tsp. fresh lime juice
1 tsp. fresh ginger (minced)
1/2 tsp. lime peel (finely grated)
Pinch of salt

Combine the cantaloupe, honeydew, watermelon, onions and mint in a medium bowl and toss to combine. In a small bowl, whisk the olive oil, lime juice, ginger, lime peel, and salt. Pour over the melon mixture and toss to evenly coat. Adjust seasoning to taste and serve immediately.

Personal Notes:
"Emeril Lagasse" put this on top of a salmon filet, but I think it would go well on most fish as well as pork.
