"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for MEATLOAF, by Jan Boettcher, is from The Standley Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 large egg 1 c. tomato soup or tomato paste 1 c. bread crumbs (seasoned in can) 1 3/4 tsp. salt 1 tsp. pepper 1 1/2 c. onion (finely diced) 2 lbs. ground beef 1 lb. ground pork
Preheat oven to 350º. In a large bowl whisk egg thoroughly, add the soup (or tomato paste) and continue to blend until well combined. Add cracker crumbs, salt, pepper and onions. Continue to mix until thoroughly combined. Add beef and pork and continue to mix with your hands until thoroughly combined. Place mixture into a loaf pan. Bake for 1 hour and 30 minutes until done or center reaches 165º. Let stand for about 15 minutes before serving.
This is a foolproof easy recipe that everyone loves. Paul of course smothers it in ketchup or barbecue sauce.
