Vanilla wafers
2-8 oz. cream cheese, softened
3/4 cup sugar
1 Tsp vanilla
2 eggs
1 T lemon juice

Blend all the ingredients until light and fluffy.

Use foil lined cupcake papers. Makes 24.

Place 1 vanilla wafer in each cupcake paper.
Top with a heaping T of cream cheese mixture.
Bake for 10 min. @ 375
Cool. Top with fresh fruit or pie filling of your choice.
