10 Sweet Potatoes ½ cup olive oil 2 Tbsp thyme 1 ½ tsp each of salt and pepper ½ tsp BBQ seasoning or steak spice 3 Tbsp chopped fresh chives (2 Tbsp of olive oil)
Preheat oven to 475º. Peel sweet potatoes and cut in ¼ “ wedges. Toss with oil, thyme, and seasonings. Spread on 2 cookie sheets in a single layer. Bake 8-10 minutes, turn, bake another 7-8 minutes. Put back into the bowl, toss with the remaining oil and chives.
