1/2 stick butter or margarine
6 T. chopped onion
3/4 c. sliced celery
2 1/2 c. hot water
2 med.potatoes, peeled and cubed
1 lb. frozen corn kernels
2 tsp.salt
1 pinch of ground white pepper
1/4 c. all purpose flour
4 c. half and half, divided
2 T. sugar, or to taste

Directions:
Directions:
Melt butter over medium heat; add onion and celery and cook until soft but not brown, 4-5 minutes.
Add water, potatoes, corn, salt and pepper. Cover and simmer for 15 minutes, until potatoes are barely tender.
Whisk flour into 1 cup half and half; stir into the soup. Stir in the remaining 3 cups half and half. Simmer about 12 minutes until soup has thickened. For a thinner soup, add a little milk; for a thicker soup simmer for 10 minutes longer. Add sugar and additional salt and pepper to taste.
