6 slices bacon 2 1/2 cups fresh cheese tortellini 3/4 cup mayonnaise 1/2 cup white sugar 3 tsp vinegar 3 heads broccoli, cut into small pieces 1 cup raisins (or craisins) 1/2 cup sunflower seeds 1/2 small red onion finely chopped
Cook bacon (can use turkey bacon or fried shaved ham) and cut into small pieces. Set aside. Boil tortellini for 6-10 minutes. Rinse and drain under cold water. In a small bowl, mix mayonnaise, sugar and vinegar. In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and onion. Pour dressing over and mix.
