5 lbs. red potatoes
1 c. water
1 c. vinegar
1 small jar of pimentos
1 c. sugar
1/4 c. flour
1/4 c. oil
Fresh parsley
1/2 c. chopped onion
1/2 c. chopped celery
1 lb. bacon, cut up and fried
salt and pepper to taste

Directions:
Cook 5 lbs of red potatoes, peel and slice. Put sugar with flour and mix good. Put oil, water and vinegar in pot. While heating, put flour and sugar mixture slowly in vinegar and water mixture until thick.
Fry bacon and drain grease. Drain pimentos onto paper towel. First put onion and parsley, (cut up fine), salt and pepper, and celery on potatoes with liquid and mix good. Then fold in bacon and pimentos. Serve warm.
