Muffins:

1 1/2 cups flour
1 Tbsp baking powder
3/4 cup sugar
1 tsp salt
3/4 cup butter
1 1/2 cups diced apple
2 cups bran flakes
1 1/2 tsp cinnamon
2 eggs
1 cup milk


Topping:

1/2 cup reserved dry mixture
1/4 cup chopped walnuts
2 Tbsp sugar
1 1/2 tsp cinnamon

Directions:

Muffins: Sift together flour, sugar, baking powder and salt. Cut in butter as for pastry. Reserve 1/2 cup for topping. Add apples (make sure the apples are cooking apples and slice or chop fairly fine), cereal and cinnamon to dry ingredients. Combine eggs and milk and add to mixture. Stir just until moistened-batter will be lumpy. Fill muffin cups. For topping, mix reserved topping, sugar, cinnamon and walnuts. Sprinkle over muffins. Bake at 400º for 15 to 20 minutes or until inserted toothpick comes out clean. Cool on wire rack. Makes12 muffins.
