2 to 3 lbs thinly sliced yellow onions
3 T. butter
1 T. oil
1 tsp. salt
1/4 tsp. sugar
3 T. flour
2 qt. beef stock
1 c. dry white wine
1 bag dried bread cubes
1 pkg. shredded mozzarella cheese

Directions:
Cook onions slowly in butter and oil in covered, heavy bottom saucepan for 15 min. on low heat. Uncover and raise heat to medium. Stir in salt and sugar. Cook 30 to 40 min, stirring frequently, until onions are an even, deep, golden brown. Sprinkle in flour and stir for 3 min. Turn onions out onto a paper towel, cover with a second paper towel and squeeze out excess fat. Bring stock and wine to a boil. Add squeezed onions. Simmer partially covered for 30 to 40 min., skimming occasionally. Pour soup into 4 or 6 fire proof tureens. Add dried bread cubes to each bowl. Sprinkle cheese over bread cubes until completely covered. Place in 350 degree oven for approximately 10 min., until cheese melts. Place under broiler for approximately 1 min. to lightly brown.
