1 lb (500g) beef stewing cubes or simmering steak
6 cups chopped vegetables (onions, carrots, celery, potatoes)
tsp each of thyme, dillweed and pepper
1 can beef broth or equivalent of beef bouillon mix
1 bay leaf
cup pot or pearl barley

Directions:
Directions:
Brown beef at bottom of soup pot. Add all ingredients plus 4 cups of water and bring to a boil. Cover and reduce heat to simmer until beef and barley are tender. Remove the bay leaf. Serve sprinkled with chopped fresh parsley if desired. Can also add frozen peas and/or beans.
