Canadian Butter Tarts Recipe

Crust:
5 c. flour (4 1/2 for crust plus 1/2 c. to roll out)
1 pound lard (do not use butter)
2 eggs (place in measuring cup and add enough water to make 1 c.)

Filling:
3 eggs
3 TBS. butter, melted
1 c. brown sugar
1/2 c. light corn syrup
1 tsp. vanilla

Directions:

Crust: Mix lard and flour until crumbly. Add egg mixture and mix with hands or pastry blender. Roll out to 1/4". Using the top of mini tart pans, press into dough and cut out shape. Place into tart pans. (Makes 12 tarts)

Filling: Beat eggs, brown sugar, corn syrup and vanilla with electric mixer. Add melted butter. Mix until foamy. Pour into tart pans. Bake for 30 minutes at 350º. Do not double this recipe as it will not work!
