Rhubarb Muffins Recipe

1 1/4 c. packed brown sugar,
1/2 c salad oil,
2 tsp. vanilla,
1 egg,
1 c. buttermilk,
Combine above ingredients and beat well.
1 1/2 c. diced rhubarb,
1/2 c chopped nuts,
2 1/2 c unsifted flour,
1/2 tsp. salt,
1 tsp.
1 tsp. baking powder,

Stir the dry ingredients into the rhubarb mixture until blended. Spoon batter into greased muffin tins, filling 2/3 full.
1 tbl. melted butter,
1/3 c. sugar,
1 tsp. cinnamon,
Scatter sugar mixture over filled cups and press lightly. Bake in 400 oven for 20-25 min.
