4 pound roast
1 Tablespoon salt (I use less)
1 teaspoon pepper
1 jar (5 ounces) prepared horseradish
1 cup water
8 small potatoes (cut in half)
8 medium carrots(cut in fourths)
Medium onion

Directions:
Directions:
Cook beef in "Dutch" oven (large pot) over medium heat until brown; reduce heat. Sprinkle with salt and pepper. Spread horseradish over both sides of beef. Add water. Heat to boiling;reduce heat. Cover; simmer on range top 21/2 hours. Add vegetables. Cook until tender, about 1 hour.
Use pan drippings to make gravy

Same as above except: Make a gravy from mix or use a jar gravy; place in the bottom of the pot.
Place vegetables on top of gravy. Place beef on top of the vegetables. Skip the water. Cook on low for 10 hours
