4 strips bacon
6 med cooked & diced potatoes
1/2 medium onion, chopped
1 T. flour
1/3 c. white vinegar
1/3 c. water
3 T. sugar
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. yellow prepared mustard
1 tsp. dried parsley (optional)

Directions:
Directions:
Dice and fry bacon slowly until brown and crisp. Drain bacon, put 4 T. bacon grease aside. To the grease add 1 T. flour; stir over heat, then add vinegar, water, sugar, salt, pepper and mustard.

Simmer for 2 or 3 minutes to blend. Pour over cooked, diced potatoes. Add parsley and bacon. Mix well.

This must be served warm, is best if made 3 or 4 hours ahead of time and potatoes should be peeled and boiled in slightly salted water, instead of with jackets on. DO NOT over cook potatoes
