3 bananas
4 eggs (2 just the whites)
1 cup brown sugar
cup vegetable oil
cup buttermilk
2 cups whole wheat flour
1 cup natural bran (oat bran)
cup flax (ground)
1 Tbsp baking powder
1 tsp salt
1 tsp baking soda
any frozen or canned fruit

Directions:

Mix all ingredients together by hand. Bake at 375 for 25-30 minutes. Makes 12-18 muffins. Easy to make. Add anything you want. Can take out half the oil and add about 2 cups of zucchini, or chunked pineapple. Any type of nut is a great addition also.
