1 pound bulk sausage
2 cups chopped celery
8 ounces fresh mushrooms, sliced (about 2 cups)
1 ½ cups chopped onion
4 teaspoons chicken bouillon or 4 cubes
2 ½ cups boiling water
2 (7 ounce) packages herb-seasoned stuffing mix
2 teaspoons poultry seasoning
4 eggs

Directions:
Directions:
In large skillet, brown sausage: pour off fat. Add celery, mushrooms and onion; cook until onion is tender. Add bouillon and water to sausage mixture; bring to a boil. In large bowl, combine remaining ingredients with sausage mixture; mix well. Use to loosely stuff turkey just before roasting. Place remaining stuffing in 2-quart greased baking dish; cover. Bake at 350 degrees for 45 minutes or until hot.
