3 large Sweet Potatoes, washed , peeled and cut into 3 1/2 inch long sticks
4 cups vegetable oil
Dijon honey mustard
Tomato Ketchup

Directions:
Directions:
Wash the potatoes. Peel the potatoes' skin and slice into potato sticks. Heat oil in large fryer or heavy saucepan to 375ºF. Add the potato sticks enough to cover the fryer; fry until light brown. Remove with slotted spoon; drain on paper towels. Repeat with remaining potato sticks.

Serve warm with Dijon honey mustard or Tomato Ketchup. Makes 3 servings. Preparation time: one hour.
