1/4 cup flour
salt & pepper
1 cup tomato juice
3/4 cup chopped onion
3/4 cup chopped celery
3 Tbsp butter
3 cups bread crumbs
several slices of bacon
1 1/2 lbs steak (game or cheap cut)

Directions:
Directions:
Pound flour, salt and pepper into steak, making them quite thin. Prepare stuffing by slightly cooking the onion and celery in butter in a frying pan. Add bread crumbs and stir. Spread stuffing on steaks. Roll and tie if needed. Slightly cook bacon and place on top of the steaks. Add tomato juice, cover and cook at 325ºF for about 3 hours, basting now and then. This is a great way to serve moose or deer steaks, or some of the less-than-tender beef cuts.
