Grilled Pork Tenderloin w/ Peanut Sauce Recipe

Ingredients: 1/2 cup soy sauce 1/2 cup rice wine vinegar 2 tbsp. toasted sesame oil 2 tbsp. honey 1 tsp. peeled and grated fresh ginger (or 1/2 tsp. ground ginger) 2 cloves garlic, minced 1/2 tsp. lemon pepper 1 or 2 lb. pork tenderloin 1 lb. fresh asparagus

Directions:Make the marinade by whisking together the first 7 ingredients.
Place the asparagus in a zip lock bag with 1/4 cup of the marinade. Work the bag gently with your fingers to distribute the marinade. Do the same with the pork tenderloin, using a second zip lock bag and 1/4 cup of the marinade. Let the meat and asparagus marinade at room temperature for at least 30 minutes.
Add the peanut butter to the reserved 1/2 cup of marinade and whisk until smooth.
Grilling: Prepare the grill to medium-high and oil the grates. Grill the tenderloin for 3-4 minutes on each side, rotating it a quarter turn at a time, until the internal temperature registers 140º in the center. Remove the meat from the grill and let sit for 5 minutes before serving. Meanwhile, grill the asparagus spears for 2 minutes per side or until just tender.
Slice the meat diagonally into 1 - 2 inch slices. Serve with the peanut dipping sauce. |
