8 eggs or EggBeater equivalent
1/2 cup milk
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 pound chopped ham or precooked bacon, crumbled
1/3 cup grated Parmesan
2 tablespoon chopped flat parsley
Nonstick cooking spray

Directions:
Directions:
Preheat oven to 375º.

Spray 2 mini muffin pans with spray (24+24=48).
In large bowl whisk eggs, milk, salt and pepper.
Stir in ham, cheese and parsley.
Fill muffin cups with mixture almost to top
Bake 8-10 mins until puffed.

Serve immediately—great for Brunch--
