2 cups unsalted butter
1 cup fruit sugar (extra-fine granulated sugar)
3 1/4 cups all-purpose flour
1/2 cup rice flour
12 oz Toblerone bars (milk or dark chocolate), coarsely chopped (about 2 cups/500 ml)
1/4 cup icing sugar

Directions:
1. Preheat oven to 325º F. Butter and flour baking sheets or line with parchment paper or silpats.
2. Beat butter until very light. Gradually beat in fruit sugar and beat until sugar is dissolved and batter is light, about 5 minutes.
3. Sift two types of flour together and mix well. Stir into butter mixture and knead well.
4. Reserve about 50 of the large chunks of chocolate and mix the remaining into the dough.
5. Arrange mounds of dough on prepared baking sheets and press a reserved piece of chocolate into the centre of each.
6. Bake for 20 to 25 minutes or until just lightly browned. Cool on racks.
7. Dust cooled cookies with icing sugar.
