1 T olive oil
1 medium sized onion, chopped
2 cloves garlic, crushed
2 - 3 T curry powder
2 T tomato paste
4 tomatoes, diced (or use a can of tomatoes)
2 c. pumpkin, peeled and diced
2 c. mixed vegetables (whatever preference you like)
1 1/2 c. water
salt & pepper to taste
Rice to serve

Directions:
In a large saucepan, heat oil and saute onion and garic until onion is soft. Stir in curry powder and tomato paste. Cook for about three minutes. Stir in tomatoes, pumpkin, mixed vegetables, water, salt and pepper to taste. Cook over a medium heat for 30 minutes or until vegetables are cooked. Add more water if needed. Serve on a bed of freshly cooked rice.
