6 sausages
1 carrot, grated
1 zucchini, grated
1 onion, peeled and chopped finely
2 rashers bacon, optional
1/2 c. corn kernels
6 eggs, lightly beaten
1/2 c. cream
1 c. grated cheese
dash of worcestershire or soy sauce
salt & pepper
extra grated cheese for the top

Directions:
Directions:
Cook the sausages and slice into pieces about 2 cm thick.
Cook the onion and bacon, if using, for about 4 minutes over a low to medium heat.
In a bowl combine the zucchini, carrot, corn and add the onion and bacon.
Add the eggs, cream, cheese and sauce and mix well together.
Lightly grease a large shallow baking dish and place the cut sausages in the base.
Pour over the egg mixture and sprinkle with extra grated cheese.
Bake in a moderate oven (180ºC) for approximately 35 minutes or until set.

If you have left over sausages from a barbecue this is a good way of using them up. It is also good way of getting children to eat vegetables.
