30g butter
1 large leek chopped
1.5kg butternut pumpkin. DO NOT SUBSTITUTE
3 cloves garlic
1.5ltr chicken stock NO ADDED SALT
1/2 cup light cream
salt & pepper
1 sheet of light puff pastry

Directions:
Directions:
Melt butter in large pot,add leek and garlic and cook - stirring until leek is soft.Add pumpkin and stock, bring to the boil them simmer covered for 25min or until contents are very tender.
Pre heat oven to 180 . Blend the soup in batches ( or put in food processor) until nice and smooth. Stir in cream and season to taste with salt and pepper. Put soup into oven proof small bowls and place a circle of puff pastry on the top. Brush with a little egg. Bake until pastry is puffed and browned.
