1 tbsp canola oil
4 medium bonelees, skinless chickn breast cut in strips
1 14 oz can tomatoes
1 8 oz can tomatoe sauce
1 1/2 cups chopped bell peppers
1/2 cup chopped celery
1/2 c chopped onion
2 cloves garlic minced
1/4 tsp salt
1 tbsp basil
1 tbsp parsley
1/4 tsp red pepper
2 2/3 cups steamed rice

Cook chicken on both sides. Add remaining ingredients and simmer for 20 minutes. Serve over rice
