1/2 cup butter, softened
1 cup brown sugar
3 tablespoons sugar
1 egg
2 teaspoons vanilla extract
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons instant espresso coffee powder
1 1/2 cups chocolate chips

Directions:

Preheat oven to 350º.

Cream the butter and sugars until fluffy.
Beat in egg and vanilla extract 30 seconds.

Sift dry ingredients into a bowl. On low speed add the dry ingredients into the butter mixture-just till combined.
Stir by hand to add the coffee powder and chips.

Evenly drop 2 tablespoons cookie dough for each cookie on a well greased cookie sheet or use parchment paper. Gently push with back of spoon into a 2 inch circle.

Bake 20 minutes or until browned around edges.
