Whole garlic head
2 teaspoon olive oil
1/3 cup goat cheese with herbs, softened
6 skinless, boneless chicken breast halves
1/2 teaspoon salt
1/2 teaspoon black pepper

Directions:
Directions:
Preheat oven to 350º.

Slice the top off the garlic, pour olive oil over top and wrap in tin foil. Bake for 60 minutes. Let cool for 10 minutes and squeeze pulp into a small bowl. Combine with cheese, stirring well.

Cut a horizontal pocket in the thickest part of the chicken breast. Stuff with 1 tablespoon or so goat cheese mixture.

Salt and pepper the entire breast.

At this point you can wrap and refrigerate for up to a day.

In ovenproof skillet, heat oil over med/hi heat and cook breasts for 3 minutes or until lightly browned. Turn breasts over and finish in 350º oven for 20 minutes (or until the internal temp registers 165º)
Let rest 5 minutes.
