2 tsp. peanut oil
500g lean beef, cut into strips
1 small red chilli, seeded and sliced
3 cloves garlic, chopped
3 tomatoes, chopped into 2cm pieces
1 medium zucchini, sliced
4 c. cooked long-grain rice
6 spring onions, finely sliced
soy sauce, to taste

Directions:
Directions:
Heat a wok over high heat and add the peanut oil. Stir fry beef strips and chilli in two batches. Set aside, add garlic, tomatoes and zucchini, cook for 2-3 min.
Add beef, rice and spring onions. Cook for 2-3 min. Season to taste with soy sauce, salt and pepper
