2 eggs
2 tbsp. plain flour
salt and pepper
8 chicken thigh fillets, cut into strips
1/2 c. chicken stock
1/2 c. tomato sauce
juice from 1 lemon
2 tbsp. soy sauce
1 tbsp. sugar
olive oil for shallow frying
2 oniions, cut into wedges
2 cloves garlic, chopped

Directions:
Directions:
Place eggs, flour, salt and pepper in a large bowl and whisk until smooth. Add chicken and stir to coat. Combine stock, tomato sauce, lemon juice, soy sauce and sugar in a small bowl.
Heat some of the oil in a wok or pan cook chicken in batches, over high heat until browned. Remove from pan. Use more oil as required with each batch.
Heat a little more oil, add onion and gralic, stirfry until onion is softened. Return chicken to pan, add sauce mixture and stirfry until sauce coats chicken
