Ingredients: 1/4 c. grated peeled fresh ginger 1/4 c. rice vinegar 1/4 c. maple syrup 1 2-1/2 pound salmon fillet (skin on) 6 shallots, peeled and halved lengthwise 1/2 tsp. salt 1/4 tsp. black pepper 2 tbsp. maple syrup, divided Chopped parsley, to garnish (optional)

Directions:Preheat Oven 450 Combine first three ingredients in bottom of a large platter or casserole dish. Add fish, skin side up, to ginger mixture. Cover and marinate in refrigerator 20 mins. Remove fish from marinade; pat dry with paper towel to remove excess marinade. Cover a cookie sheet (with rim) with foil and place in oven 5 mins. Put piece of parchment paper on foil-covered cookie sheet, then place the fish, skin side down, on sheet and scatter shallots around edges of fish. Sprinkle with salt and pepper. Brush fish with 1 tbsp. syrup. Bake for 10 mins. Brush with 1 tbsp. syrup again; bake an additional 7 mins or until fish flakes easily when tested with a fork. Sprinkle with parsley, if desired. Yield: 6 servingsē |

Notes: This is absolutely one of my favorite recipes. I once made this for guests, and didn't realize that one of them didn't like fish. By the end of the meal he was a convert, raving about this recipe. It's from Cooking Light, so as a bonus it's healthy. It's really easy too, and presents nicely.
