6 cups rolled oats

1 cup unsalted chopped nuts and/or seeds - we like walnuts, almonds, pepitas and sunflower seeds

1/2 cup safflower or canola oil

3/4 honey, agave or maple syrup

1 Tbs cinnamon

Salt

OPTIONAL INGREDIENTS:

1 cup raisins or dried cranberries

1 cup wheat germ

1-2 scoops protein powder

Directions:
Directions:
Preheat over to 300 degrees.

Toss the dry ingredients, then add the oil. Put the sweetener in the same measuring cup so it will slide out easily and add that. Mix well to coat evenly. Spread mixture on two large pans and bake until golden. Turn over the mixture every 10 minutes so it doesn't burn. Let cool and store in an airtight container.

This is a great recipe I adapted from Deborah Madison's Vegetarian Cooking for Everyone. It's a great way to start the day and, placed in an airtight container, it will just last and last.
