3 egg yolks
2 tbsp fresh lemon juice
pinch cayenne
1/4 tsp salt
1/2 cup butter, melted to bubbling stage (in microwave)

Directions:
Put all ingredients into blender, except the hot butter. Turn motor on high, then after 3 seconds, pour bubbling hot butter over egg mixture in a steady stream. In 30 seconds, the hollandaise should be cooked and thickened. Keep warm.

This is very fast and easy. Excellent over cooked vegetables such as asparagus and artichokes, or over poached salmon or for Eggs Benedict.
