8 eggs 3/4 cup flour 1 tsp baking powder 2 cups cottage cheese 2 cups shredded Jack cheese 1/2 cup melted butter
Mix all ingredients and pour into 9x13" pan. Bake at 350º for about 35 minutes. Nice do-ahead breakfast for a group! Freezes well. Double this recipe for extra-thick squares (still using 9x13" pan). Good with your choice of add-ins (crumbled bacon, sausage, diced green chilis).
