30 oz pkg hashbrowns
1/2 cup butter
1 cup chopped ham, bacon, or sausage
1/4 cup finely chopped white onion
1/4 cup green onion
1 cup shredded cheddar cheese
1 cup shredded jack or pepper cheese
9 eggs
1 1/2 cups milk
salt & pepper to taste

Directions:
Directions:
Reserve 1 Tbsp butter. Melt remaining butter in 9x13" pan and press hashbrowns into the butter. Bake at 425 for 25 minutes. Brush reserved 2 Tbsp butter onto hashbrowns. Spread meat, onions, and cheeses over hashbrowns. Mix eggs, milk and seasonings and pour over hashbrowns. Bake at 350 for 30-40 minutes. Can make the night before.
