6 medium tomatoes (sliced and diced)
1/4 lb. crumbled feta cheese
1 c. greek olives (sliced)
1 small red onion (thinly sliced rings-separated)
1/2 green pepper (diced)
2 cucumbers (peeled and diced)




Dressing:
1/3 c. red wine vinegar
2 Tbsp. fresh parsley (chopped)
1 clove garlic (minced)
4 tsp. sugar
1/2 tsp. dried basil
1/4 tsp. salt
1/4 tsp. coarsely ground pepper
1/2 c. olive oil

Directions:
Directions:
In a 13x9 inch dish, layer tomatoes, feta cheese, onion, olives, cucumber and green pepper. Pour Greek dressing over salad. Cover and chill at least 2 hours. Dressing: combine all ingredients except oil. Add oil gradually, beating with a whisk until blended.
